That the Beta didn't update to the latest firmware, that I had to go back to get het latest.

In my eyes the beta firmware should also see there is a newer version.

Beta firmware never updates to the latest production by design. It is your decision to leave the beta. It was worse when you had to contact WiiM to leave a beta firmware.

Out of curiosity, what changes between Movie and Music modes?

Music always sounds better to me than Auto. :) Also (and in particular) with HDMI ARC.
Yes. I'm also just a bit disappointed that the product folks at WiiM who designed the UI seem to believe that an HDMI source is primarily for "Movie mode" and recommend that as a result. I would speculate that the WiiM products really haven't evolved enough "Home Theater Support" to the point that, I would think, buyers are routinely using their WiiM-connected hi-fi components to watch TV with expectations "theater sound". I routinely play music from my Apple TV 4K, or target it using AirPlay to listen through my WiiM Ultra.

Also, screw the theater EQ - I want my system setup to reproduce the audio it receives as received to the best of its ability. I'll let the producer of the movie/video/sitcom decide how they want their program to sound without assuming emphasis on Movie action-sequence enhancement.

Truth to be told, I just got used to applying the "Action 1 voicing" on my Lyngdorf when watching movies. It provides a slight bass boost, just enough to give me that tad of extra oomph for more enjoyment. But to mimic this on my WiiM Ultra I need nothing more than a per-source EQ, which has been available before.

I didn't do much testing concerning this new feature, it's just that the initial impression didn't convince me. :)
