If you don't want the latest FW you should block the Wiim device from the Internet.
If you don't do that they will push it out to you at some point.
I do want it, just wondering if I need first to get the one offered now and then the latest (out today) when available here in Europe, or just defer updates (on the app: "not now") to save one cycle.

but blocking the internet would mean castrating the wiim of its streaming services possibilities and only being able to play locally stored music. or am I making a serious fallacy?

You are correct sir, it does "castrate" it's streaming capabilities. I block all new firmware until the folks on this forum have ironed out all the snags and bugs that it contains. When I'm sure it OK, I then allow Internet access and get the new firmware.
As 90% of my listening is from a plex server located within my home network or via my TV thru HDMI it's no big problem for me but I accept it would be for a lot of people.

Why not just install a beta version? That should block any new update.
