AppleTV to WiiM Ultra to Samsung Frame Dolby question

Hoping someone can help me set up my system to its full potential.

AppleTV 4K HDMI out to:
(HDMI in) Samsung Frame HDMI eARC out to:
(HDMI eARC in) WiiM Ultra Optical out to:
(Optical in) Hegel H120 2 channel integrated amp out to:
2 channel floor standing loudspeakers

Added the Ultra in to take advantage of tidal Connect for hires music listening on my 2 amp speaker set up.

However, want to optimise sound for movie/tv watching as well.

What audio settings are best on:

AppleTV (change format to DOlby Digital 5.1, or change format off and send uncompressed?)
Samsung Frame (Passthrough or PCM?)

I’ve been testing different setting options and passthrough on Samsung worked for a Dolby movie and showed Dolby on the Ultra screen. Then it stopped working and no sound. Switched back to PCM in Samsung settings and sound returned with PCM showing on the Ultra screen.

The WiiM Ultra can apparently deliver some Dolby Digital formats but not Atmos?

Or does none of it matter given it sound ultimately exits out of a 2 channel amp into 2 speakers?

Appreciate any guidance you legends may have.

Wiim is stereo only, I prefer my sources to do the down mixing of multi channel content, also the content may have stereo and multichannel options and if you set the source component to stereo then it will stream the stereo tracks rather than stream the multi channel then have to down mix to stereo. The less you process a signal the better.
