My issue with Wiim Ultra has been that it doesn't support bluetooth LDAC natively. I have DACs and wired headphones, but connecting to wireless headphones adds to the convenience.
I recently got FiiO BT11 USB Bluetooth HIFI transmitter (firmware 1.0.9) and connected it at the USB output. WiiM Ultra recognised it and connected with UAC 1.0 , not sure if it is a limitation of wiim or tye dongle.
Paired my Sony 1000xm5 and connected with LDAC . I also tried my APTX lossless buds and connected fine, sound is great .

Also something to note . If you leave the dongle without playing music for more than 5 minutes, it will go to sleep mode so you need to go in the audio out settings and click to wake it up. Most likely is a wiim issue as it is meant for desktop USB devices like DACs , that are always awake when on.

Its more likely a Fiio feature. Remember the dongle is primarily designed for phones so the dongle shuts down to conserve power and not drain the phone battery Not uncommon in such devices

I have a FiiO UTWS5 and I can set the time to power off in the 'Idle Power Off' section of the FiiO control app, can I do the same for the Fiio BT11?
(Sorry if this is not relevant.)

Cannot see such option in BT11. You can only select the bluetooth codecs , pairing, clear pairing and reset to default

Exactly Fiio BT11 works as intended (power management), though is advertised as hifi bluetooth transmitter for desktops as well . I will ask the WiiM technical department in case they have a better idea (dongle support)

How do you manage the volume? I tried a similar setup with BTA30, but I needed to manually set the volume on the WiiM to 100%, so it could be controlled by my headphones. And if I forgot to turn it down when I switched outputs...

You can do it either way. I am currently controlling the volume from Wiim via the remote control . I have set a normal listening volume on my headphones. Though I am not really going too far from wiim , it's currently early days 🙃. it's better not to have the volume to 100% in case of distortion, as the potentiometer/circuit in there is not the best. My suggestion would to keep it to about 80 to 90%. Ofcourse if yiu haven't noticed any issues then should be fine
