Have have an old mac mini with Apple Music on it. Can i connect this mac Mini to the wiim ultra USB and play Apple Music, which I can control with the Itunes App on my phone? I only want to do this because apple airplay 2 is lossy 256 aac , incredibly.

No. The USB is currently for storage devices only.

I wonder if a usb to optical convertor like this might allow you to take audio out of the Mac mini into the optical input of a WiiM device?
