I do not use Wiim for my TV sound, I use Sonos. The Wiim solution involves having separate Wiim devices but does not support a center channel. I would search this site for more information. For me, there does not seem to be a real 5.1 Wiim solution at this time.

The DSD to PCM conversion does not take much CPU power. There are public domain programs, including source code, that have been around for quite a while that do it. Conversion from PCM to DSD, however, is very compute intensive.

To use the line input, you need to send the signal through a photo-preamp. The low level phono signal would go through the phono input on the Ultra. There have been reports of people dissatisfied with the quality of the A to D on the phono input.

Some people have been able to send DoP data to an Ultra and have it send bit perfect output to optical and coax. According to one report that does not work for usb. Given that only 192 KHz data is supported, that is limited to DSD64.

You can make either of these situations work. Tube integrated amps can sound quite different. I suggest you think about the sound of the two amps and then circle back to the Wiim part of the solution.
