How can I connect the WiiM Pro Plus to the Bose Soundlink mini? Also, when will WiiM incorporate the Apple Music?

Only via Bluetooth.
Highly unlikely that it will ever incorporate Apple Music. Apple just don’t allow it.

Either via Bluetooth out or line out via a twin RCA to 3.5mm cable.

I think it's extremely unlikely that the Pro Plus will ever support Apple Music as Apple in general don't publish an API to allow third parties to support that
