I am planning to put some Wiim Amps or Amp Pros in the basement but want to have some control in the kitchen an den (both on first floor). I'm planning to mostly do this with the remote but am really debating installing some in line controls like these to make it super easy to turn up/down volume without needing the remote or phone interface (would love to find one with a mute button). Den will have 4x8ohm speakers (one amp) and kitchen will have 2x8ohm speakers (one amp).

Will this create any additional load or sound quality issues? I'm concerned the amp is 120w and most volume knobs appear to be 100w. I guess I could set volume limits.

Yes that will work. A lot of professional building installs have these. The amp will always see an nice steady impedance of 8 ohms and a 100 watt version will withstand a constant/sustained power of 100 watt which in practice will never happen. And indeed you can always limit the max output of the amps.
