Would I get better audio quality going from my old Mitsubishi DD-6030 cd player with rca cables to WiiM in rca or optical in to WiiM, then rca out to my pioneer sx-850?

Easiest for you try and decide for yourself honestly - it depends on how each DAC performs/sounds.

The second option is preferred as connecting via analog input of the WiiM will degrade the audio signal due to the additional AD conversion.
