I have a new WiiM Ultra. I do not have USB as an option for audio output. Not in setup or device settings. This cant ve right.

Im thinking of plugging it into the TV, well projector through USB and use its HDMI e arc
Have you read the specifications?

The USB output of the WiiM Ultra is USB audio only. To enable it it requires connection to a device that accepts USB audio input. As soon as you have that, you will see it as a selecable output.

The Ultra HDMI is ARC input only.

I know this now, about HDMI. It doesnt mention ANYWHERE that it has to be plugged in to USB to make it selectable. Optical coaxial, RCA are selectable and they arent hooked up.

That is the normal way. You can have multiple USB devices attached and to know what to make selectable, they need to exchange configuration information first.
