Using A DDC From USB OUT

I like the idea of a DDC in theory and to my ears there is a difference in the sound of some different DAC’s from each other. I also have found the sound can be changed by how these components are connected with each other. I liked the Ultra/ PO100 combo but found the difference minimal. I liked the sound more from the Douk combo that I’m using. That they are connected via I2S might have something to do with it, or perhaps just the synergy between them. When I had some trouble with my CD player connected via optical to the Ultra I tried different solutions including going COAX into the Douk DAC and using a different DAC but neither of those options sounds as good as using the Douk DDC/DAC combo with the Ultra.

You can connect multiple input and output USB devices via an USB hub. That is standard USB functionality.
I don’t think WiiM devices can choose between multiple SSDs though like they can multiple external USB DACs

I picked up a U2 PRO today and connected it to my Ultra's USB out then optical out from the U2 PRO to my Vibelink Amp. Tried a few different sources such as my CD Transport and WiFi streaming but kept hearing stuttering every now and then on any track and source, very frustrating!

I swapped the usb cable that came with the U2 Pro to a better usb cable but still no joy, still stuttering so I dug into the settings for USB Output Resolution and swiped on the Fixed Resolution toggle and that seemed to be do the trick, now all tracks playback properly. The blue led light stays on 192kHz. I don't have access to any hi res DSD files so I'm all good.

So, now you digital music is no longer played at its native resolution but everything (that's not already there) is always reencoded. What's the advantage over plugging the provided optical cable right between the WiiM Ultra and the WiiM Vibelink Amp?

I use a Singxer SU6 as a DDC and then connect it to coaxial audio on my active speakers. Of course, I've also tried it with various DACs, even high-end ones, such as the Gushard X30. One thing is certain: you can hear the difference. It might be the much lower jitter and the higher isolation, but the differences are clearly audible. These differences obviously become smaller the higher the quality of the streamer or source upstream in the audio chain.
