After updating my firware on 8/18, any ethernet cable connected to my Wiim Ultra will cause Roon to no longer see any connections with the Wiim ultra. Disconnect the ethernet cable and Roon sees the Wiim just fine. Any ideas as to why?

Honestly, I don't get this part. The WiiM Ultra doesn't support AirPlay and it never did with any production firmware. Maybe I got that wrong? I'm not a Roon user

It's understood that as soon as you connect your Ultra via Ethernet it no longer works with Room while it does when using the Wi-Fi connection. With an Ethernet cable connected the Ultra's Wi-Fi is (and always has been) turned off. That's normal and it's unrelated.

I cannot make sense of this section. As per above, the Ultra does not support AirPlay. Chromecast is supported but does not (and never did) require a direct Wi-Fi connection from your phone to your Ultra. It does require a Wi-Fi connection from your smartphone to your Wi-Fi access point (most likely integrated into your router) and any network connection from your router to the Ultra, be it Wi-Fi or Ethernet.

The only precondition for Chromecast is that your smartphone and your Ultra must be on the same logical network (which is not the same as all cables go to the same router) and all the protocols and ports required by Chromecast are not blocked.

Are you saying that - independent of Room - Chromecast from your phone to your Ultra no longer works with the ethernet cable connected? If so, then this is the proof of a network related issue.
my mistake. It's a Wiim Pro Plus and not ultra.

So WiiM is on 192.168.9.166 now. Do that matches the IP address you can see for the Ethernet connection or for the WiFi connection?

The WiiM may have different IP addresses for Ethernet and WiFi.
There's no way to cross reference the wifi vs Ethernet IP addresses. When the ethernet cable is attached to the Wiim, Roon no longer sees the Wiim at all.

with the ethernet cable attached, the Wiim app shows an address of 192.168.1.205
So that is the issue. You will need to connect Roon to that address if possible.

And then maybe set a static adresse in your router. The MAC address is not the same for the WiFi and the Ethernet interface.

Since you seem to have multiple WiiM devices, is it a WiiM Pro Plus showing the issue or a WiiM Pro Plus showing AirPlay in Roon?

Or is the Pro Plus your only WiiM, indeed?
I have three wiims. one Wiim Pro Plus, one Wiim pro and one wiim mini. Both the Wiim Pro Plus and the Wiim Pro show airplay and chromecast options in Roon. The Wiim Pro is only connected via wifi. The Wiim Pro Plus displays Airplay and Chromecast options only when it's connected via wifi. When connected via ethernet, the Wiim Pro Plus cannot be seen by Roon.

Did you see comment #27?

that's the whole issue. Roon simply does not see the Wiim at that address. There's no way to tell Roon to see that address. The way the software works is that it searches out any streaming devices on the network and adds them to the audio device list.

Yes. That is strange. The WiiM Home App can see it, so it's on the network.

Do Roon havde a range of IP addresses that it scans? Or what kind of discovery is it using. I don't know Roon, so not much help from me there. Only guesses.

That's one issue. There's no way of determining how Roon operates. I'm awaiting word from the Roon engineers to see if it's a bug in their latest software upgrade.
