Features wanted in a Wiim Ultra 2

Being on page 11 of this thread my answer is: nothing. I‘m perfectly happy.
I would love to have a clock display during playback though. But this is easily solved via a SW update and doesn‘t require a new device.
 
2 subwoofer output with option to make it mono and stereo, analogue volume control. Just make minidsp flex but with streamer and analog volume control. You can also make your own measuring mic like umik-1 and make it all cheaper.

Yes, kick Eversolo out of its slot by implementing a better SFP fiber input.
Some might add IIs output but would be really happy with a nice SFP input.

I did once consider SFP when struggling with electrical issues but simplification and a bit of a rethink on connections did the job instead. SFP is expensive and so niche I can't ever see it being included, especially as it is so easy to just put a SFP bridge in if you really need it.

While I can't quibble with your classification of SFP as niche, it's already appearing on various streamers like Hifi Rose and Eversolo. The higher end would certainly fit the niche category but the Eversolo less so.

You'll see it appearing more and more. I'm currently running it to a WiiM Pro using a bridge of two Cisco Meraki from a router and it's great.

* Larger screen
* XLR output
* Linear power

In practice this going to look like this in most cases:

(Maybe) fibre into the house and router.
From there on via CAT into the living room, because it‘s installed or because the router doesn‘t a fibre output anyway.
Then a CAT-to-Fibre converter and on into the streamer.

What a load of BS.

SFP only makes sense if you can realise it from beginning to end. And even then, what‘s going to be the benefit?
None!
