Since there’s no power-off button on the WiiM Amp Ultra, is it safe to just unplug it, or is there a shutdown procedure I should follow?

The supply voltage will drop (that's the whole point) and there's no guarantee that this is going to be smoothly. Different stages might react differently to that and increased distortion might occur. If there is a fast relay protecting the speaker outputs this might not be an issue. It's against common sense for sure to remove the power from any (and in particular computerised) device while it's working in full swing.
That's a good reason for it not to update without your knowledgeIf it happens to be updating firmware when you power it off it could be a big problem.
