I have Both, my opinion they are both good. The Eversolo is more of a digital preamp with more options for switching inputs/outputs and a little more refined. The WiiM Ultra would do the job for 98% of people at less than half the price. As far as streaming, a streamer is a streamer, it's the add ons that make the difference to different people.

For me the lack of eArc and no auto sensing on the inputs is one of the reasons why I didn’t go for it .. The Gen 2 on the other hand

Yeah I hear you, I'll be looking at the gen 2 also. The A8 or A10 are just too mucho pesos.
The Eversolo DMP-A6 is a feature-rich network audio streamer and DAC, but it’s important to consider certain limitations that might impact its suitability for your specific needs:

DSP is available on all outputs. I think your info is out of date or incorrect on that one (might be only when using internal player). Auto sense was mentioned in the last system update but I've not had occasion to look into it. I wish it had sub out and base management, but so far I have managed without it (gen 2 will not have sub out/base management either). Anyway different strokes as they say.
Discussions about this topic can be found to any desired length in any Hi-Fi forum.
Anything can make a difference if either the data (and yes, it's digital data, not "music") on the receiving end is directly altered or the streamer somehow influences the receiving DAC in any other way (noise creeping in through the cable, EMI, whatever you may think of).
The audiophile myths start thinking that every power supply and every cable and every capacitor must always sound different, simply because they are not identical. Why would that be the case? Be prepared to find that differences between streamers are rather the exception but the rule. "But I clearly hear a difference" is enough of a justification for each individual person, but it's not a proof. Not a proof of objective quality differences, not a proof of superior hearing.
I'm not completely ruling out cases where the above does not apply. But these are calling for better engineering, I think.

I guess that statement is overly broad, I am referring to the data received, it should if a functional streamer always be identical. Of course the downstream bits will affect the ultimate sound of the unit, different DACs etc.

We are spoiled for choice at the low/mid end marketplace, especially by the Chinese market, Wiim, Eversolo/Zidoo and FiiO plenty of good options. Each have their pluses and minuses.

I was actually very happy with the Pro + SMSL 6-SU (now doing their duty in the office). But ever since the Ultra was introduced, I couldn't get this pretty little box out of my head. During further research, I also stumbled across the A6 (a very pretty and well-equipped device). At some point, the Prime Days before Christmas came around and the Ultra was offered really cheap. So I was faced with the choice: an A6 for the living room or 2 Ultras, one for the living room + one for the hobby music room (attic). As WiiM had already completely won me over since using the first Minis, the Pro was in no way inferior and WiiM also provides unique product and software care, the choice was easy: two Ultras! I'm very satisfied again and don't regret the decision. WiiM simply works reliably and shines with the best price/performance ratio. Unless they are bought by a financially strong competitor (and the philosophy is thrown overboard), I will remain loyal to them forever. I look forward to the coming years and further innovations.
