Wiim Pro (Pro +) - differences when used only as a streamer

Coax and Toslink outputs are of the same quality?
What about the size of the holes for RCA connectors?
Is it better than the first Wiim Pro series?

Yes, both support up to 24/192 and I believe recent versions of both also have increased space around the sockets

I dont think only bitperfect, but te quality of digital outputs.
Is the Architecture of hardware (without DAC) the same?

The Pro and Pro Plus do have different DACs but if you are using coax or digital outputs those don’t come into play. If you are only using them as streamers/digital transports then I would not expect any audible difference between the Pro or Pro Plus, nor between their coax or optical outputs.
