Time has passed, firmware updates have been rolled out, and this problem seems to have been resolved - at least via COAX, which is how the WiiM Pro is now connected to the Majik DSM. I unfortunately never did find the time to go through the methodical testing process I had intended, so I cannot say what finally resolved the issue - be it firmware update (likely) or connecting via COAX instead of TOSLINK, or a combination of both.

Disregard, spoke too soon. Another volume blast after pausing the music playing on my iPhone Spotify app (fixed volume output) and later unpausing the music. So we can rule out the COAX vs TOSLINK as the source of the issue, as well as Audio Output Sample Rate Switch Latency, which I have at 1500 ms. I did not clear the Spotify cache before unpausing (previous recommendation) but will do so going forward and see if that helps. If that is indeed it, it's a bit like treading on eggshells though...

Same here. Volume blast when disconnecting from Bluetooth.
