On a Win 11 PC I have shared Music and another folder. The App only see the first album I placed there. Adding more content does not show up after I select rescan mediaserver. Also under Media Server I see the name of my Win 11 PC but there are no way to select specific folders. How does that work ?

Sounds like you may have an issue with Windows sharing permissions. Rather than using a share, try installing the windows beta desktop WiiM home app (from https://www.wiimhome.com/app ) and add the folders you want to use to that. That will then appear under Home Music Share in your phone app.
I have installed your suggested desktop app. When I run it for the first time I could click Home music server and see a lot of entries. One of these folders resulted in a error message resource request failed:500. The second time I started the App and click Home music server it keeps searching for my media server which took a very long time. After that same error message.

I have in the desktop app added the folder I intend to use for my music. It is possible to browse the folders in the desktop app but not in the android app which I would like. But now I see all content there but not listed as in folders on the PC

From a quick test it appears that folder view isn't available in "Advanced" Mode and when in Legacy Mode (using the Windows WiiM app as server) "Folders" lists tracks!
I'd recommend you use MinimServer as your UPnP server as there are too many bugs in the desktop WiiM app (and the Advanced overlay in the mobile WiiM apps).
I can't get that MinimServer app to work. After download and install I come to BreeZip when I run it. Then after extracting in BreeZip I still get to this BreeZip dialog when I try to run the program
Have you installed Java as per the linked instructions?
Java now installed but still get to BreeZip when launching app
