Less of a troubleshoot, I suupose, and more a case of avoiding the need for it.

My Dayton Audio iMM-6C calibration mic has just arrived. Is there anything I need to do/do differently when re-running room correction, or is it just plug and play?

It is largely plug-and-play.
For better accuracy you can download the calibration file from: Dayton Audio Microphone Calibration Tool
Once you plug-in the mic you can import this calibration file in RoomFit, as described here: Tutorial: Microphone Calibration File Import in WiiM Home (WiiM FAQ)
 
I have a related question. I already have a Xumee USB-C adapter/DAC gizmo (see https://a.co/d/0dPIZN3g). Can I just buy the 3.5mm version of the Dayton mic (iMM-6) and then connect it to the Xumee? The Xumee should have decent enough specs for the RoomFit task and advertises that both headphone and mic functions should work. Thank you.

As reported in a previous thread, such adapters may not function properly. Additionally, that connection may prevent your smartphone from picking up low frequencies. I recommend the USB-C type IMM-6C.
