Yes. Same issue. Bought Sony xm4 and tried all my Wiim products BY out (mini, pro & ultra) but after usually 10 mins of perfectly fine use the xm4 started to play up …. Distorted sound, unlistenable. Informed Wiim of the issue and returned the xm4’s. Wiim never provided a reason or solution.
It’s reassuring that others have had the same issue….shame as I liked the xm4’s but as my use was intended with Wiim products, they had to go back. Now not willing to risk another BT headset.
WH-CH720N has BT 5.2 and experiences the issue.Could it be that the issue is with the Bluetooth version? The Sony XM-4 is BT5.0 while the WiiM Ultra Support 5.3.
It should be backwards compatible but maybe not with the WiiM implementation?
What is the BT version of the other headphones that has issues?
I got the Sennheiser momentum 4, with BT 5.2, that works with no issues.

Wonder if there might be an interference issue in your house. Here's an experience I had several years ago with wif-fi in a prior house. Everything worked find except for one Roku receiver on a TV in the kitchen where the connection was poor. Finally it occurred to me one day that there was a laundry room with a large washer & drying directly in the path between the wireless router and the Roku. Moving the wireless router about 4' to the left solved the problem. You might have a similar issue with the BT connection -- could be a metal HVAC air duct hidden in a wall or something similar. Also some devices have a better chip or antenna setup than others, or another device just emitting RFI that's interferring. Never had issues with a FiiO BTA30 Pro DAC that is a BT transceiver with antenna. Never ever, same spot where the Ultra sits.
