This should be discussed before but my short search didn't give me much. Is the volume control of Ultra any different from Pro Plus other than the fact that Ultra has the physical knob?

I think that physikal knob does just the same then the volume controls on your mobile device where WiiM home app is imstalled.

Questions about WiiM Ultra
How does Dolby work on the Wiim Ultra? Will we have proper downmixing of multi-channel content with proper handling of the .1 channel?

It would be entirely speculation as no official definitive statement has been made but you could imagine an Ultra feeding a sub and an external amp (or maybe even a WiiM Amp) taking care of the front 2.1, grouped perhaps with a WiiM Pro or Pro Plus feeding external active speakers or another external amp & speakers, or indeed another WiiM Amp taking care of the rear speakers. As I say, pure speculation and plucking ideas out of the air. if I recall, @Wiimer has had similar musings in the past ;)
