Will the artwork also show?No. Your Ultra should show "Follow xxx" (xxx is the name of your Mini) and show what is playing as if it was playing locally.
This do however not always work but a relinking usually resolve it.
I don't have a Mini but a Pro+ I use for adding additional in/out to the Ultra in this way, so can't say if there is issues with the Mini in this regard.

Linking is not permanent. Just unlink the devices and they can play individually.Also do I have the option to play just to the ultra or do I always have to play to the mini / ultra group with this setup?

I am having an issue. I have everything linked properly and I’m getting sound however as the albums change via airplay. The artwork is not changing on the ultra display. Yes with Tidal it works fine. Artwork adjust as songs change. However with Apple Music it stays on the artwork of the first song.That you will need to raise a ticket for.
I don't use airplay (or anything from Apple), so cannot test that.

Getting album art over BT requires AVRCP 1.6 (Audio/Video Remote Control Profile) on both devices.
