Usb stick with ripped cds, not displaying correctly

In closing I would just add don't go too far with the WiiM/USB approach before you try a server.
Most can be easily be spun up on Windows/Mac for testing purposes.

As its early days make sure you set dbPoweramp up to:-

write FLACs at level 5 - you can always convert downward after the event but never upward
write file names using discno and trackno with leading zeros e.g discno-trackno-tracktitle.flac - 01-05-something.flac (this aids sorting when looking at files via various software tools)
and add ReplayGain tags - you do this in DSP section of dbPoweramp (not the Apply version which permanently increases volume)

The problem is that not all of the useful tags are available through dBpoweramp e.g. DiscSubtitle, ReleaseType, OriginalReleaseDate etc

That is true. Some post processing via mp3tag is usually required.
