Have you tried a power cycle instead of a reboot? Remove the power supply for a min or two then try again.
I also have instability on the selected inputs. Wiim switches to Dlna when I have selected optical in. I am still troubleshooting. I see this behaviour when I start with DLNA casting from my android app using the symfonium app. I stop Dlna casting using symfonium and switch to optical in using wiim home app. Sometimes the device switches back to Dlna and symfonium displays the normal media playing screen even though I did not touch symfonium. So it could be a bug with symfonium, or with wiim home or with the device firmware. If I manage to pin point the offender, I will open a bug (to symfonium or wiim team).
 
It potentially can, if you use too much positive pre-gain, which could result in digital clipping. If you wan to be on the safe side, use negative pre-gain for loud sources, only.

In practice, this might mean giving up some SNR for no reason, though. The HDMI ARC input signal is often clearly below 0 dBFS (the maximum digital level). So, if your TV volume is always way lower than e.g. your streaming services, no matter what source is connected to the TV, then there's nothing wrong with applying some positive gain, maybe 3 to 6 dB.

The analogue input is another candidate. If you connect the analogue output of a CD playerto the RCA in, the level might be on par with your streaming sources. But if you connect a phono pre-amp or a turntable with a built-in pre-amp or a tuner or a tapedeck, then the input might be very quiet in comparison. If you add some positive gain here, you might elevate the noise floor a tiny bit (for this single, already inherently noisy analogue source). But if you reduce the pre-gain for your digital streaming sources instead, you're giving up dynamic range of this (close to) perfect source just to end up with equal levels.

TL;DR
Don't shy away from adding 3 to 6 dB of positive pre-gain to HDMI and analogue in. Reduce pre-gain to negative values for other sources until you get a good level matching.
